Ingredients:
- 1 pre-made pie crust or shortcrust pastry
- 1 cup golden syrup (or light corn syrup)
- 1 cup fresh breadcrumbs
- 1/4 cup heavy cream
- 1/4 cup lemon juice
- Zest of 1 lemon
- 1/2 tsp ground ginger
- 1 egg
Instructions:
- Preheat the oven to 350°F (175°C).
- Line a pie dish with the crust and prick the bottom with a fork.
- In a saucepan over low heat, combine the golden syrup, cream, and lemon juice until just warm.
- In a bowl, mix the breadcrumbs, lemon zest, ginger, and beaten egg.
- Pour the warm syrup mixture into the breadcrumb mixture and stir until combined.
- Pour the filling into the pastry-lined pie dish and smooth the top.
- Bake for 35-40 minutes until set and golden. Let it cool slightly before serving, perhaps with a dollop of cream!
